- Chickpeas
- Sesame seeds
- Olive oil
- Garlic clove
- Lemon juice
- Cumin powder
- Baking soda
- Salt
- Pita Bread
- Start by preparing the tahini. Lightly toast the sesame seeds in a pan to bring out a rich, nutty flavour, then let them cool completely.
- Add the toasted sesame seeds to a grinder and dry grind them first. Scrape the sides in between, as sesame seeds release a lot of oil and can turn lumpy. Add a little olive oil and grind until it forms a smooth paste called tahini.
- Boil the chickpeas with a pinch of baking soda until they become soft and mashable, then drain them well.
- In a grinder, add the prepared tahini, boiled chickpeas, a garlic clove, salt, lemon juice, and a pinch of cumin powder.
- Add a small splash of ice-cold water and a little olive oil. Blend everything until smooth and creamy. Add a bit more ice water if needed to achieve the perfect texture.
- Taste and adjust the seasoning if required. The hummus should be thick, creamy, and slightly tangy.
- Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with chickpeas and a sprinkle of cumin powder.
Hummus is a nutritious, protein-rich dip made from chickpeas and tahini, making it a great plant-based option. It is high in fiber, supports digestion, and provides healthy fats from olive oil and sesame seeds. This dish is filling yet light, making it suitable for snacks, light meals, or as a healthy accompaniment with pita bread or vegetables.
- Lightly toast the sesame seeds only until aromatic; over-toasting can make tahini bitter.
- Always scrape the grinder sides while making tahini to get a smooth paste.
- Use ice-cold water while blending to keep the hummus creamy and fluffy.
- Add olive oil gradually to control the texture and richness.
- Do not overblend; stop once the hummus turns smooth and creamy.
