- Start by making the white sauce. Heat butter in a pan.
- Add flour and sauté it, stirring continuously, until it is fragrant (about 1 minute).
- Gradually add milk, stirring constantly to avoid lumps, and cook until it thickens into a creamy white sauce.
- For the stuffing, heat butter in another pan. Add sweet corn and chopped green chili. Sauté for about 2 minutes.
- Add chopped spinach, salt, and pepper. Stir and cook for 2 more minutes until the spinach wilts.
- Add the white sauce you prepared earlier to the spinach and corn mixture. Cook for another minute until it thickens. Let the stuffing cool slightly.
- Once cooled, add grated mozzarella cheese and mix well. And your stuffing is ready.
- Take slices of bread. Spread the stuffing evenly on one slice and cover with another slice. Repeat for the other sandwich.
- Apply butter on the outer sides of the sandwich. Cook them on a pan over low to medium heat, about 2 minutes on each side, until golden brown.
