  • Begin by preparing the paneer- cut paneer into cubes and place them in a bowl.
  • Add salt, black pepper, and tablespoons of cornflour to the paneer. Gently toss to coat, then sprinkle a few drops of water and add another tablespoon of cornflour, tossing again to coat evenly.
  • Heat oil in a pan make sure the oil is hot. Fry the paneer cubes on high flame for about a minute, until golden brown. Remove them and drain excess oil.
  • Next, prepare the sauce- heat a pan and add oil. Sauté chopped onions, garlic, and ginger for 1–2 minutes on high heat.
  • Add hot water, along with dark soy sauce, light soy sauce, chili paste, chopped coriander stems, sliced green chilies, salt, white pepper, and vinegar. Stir well.
  • In a small bowl, mix cornflour with a bit of water to form a slurry. Add it to the sauce and cook on high heat until it thickens slightly.
  • Add a pinch of sugar, then toss in the fried paneer, onions, spring onions, and a bit of fresh coriander. Stir-fry for just a minute on high flame until everything is well combined.
  • Garnish with extra spring onions and serve hot!
